Homemade Thin Mints

Ingredients 338 grams all purpose flour 5 grams baking powder ½ gram salt 170 grams cocoa powder 170 grams butter 225 grams granulated sugar 1 large egg 5 mL vanilla extract 1 mL peppermint extract 387 grams semi sweet chocolate Directions In a bowl, mix flour, baking powder and salt. Mix in cocoa powder. Stir, stir stir. Cream butter. Add in sugar and egg. Pour in vanilla extract and peppermint extract. Pour dry mix into wet mix, creaming as you go. On a flat surface, form into 2 separate mounds. Seal and refrigerate for 1 hr. Roll out dough. Cut into 5 m circles. Bake at 180 degrees Celsius for 8 minutes. In a bowl, melt semi sweet chocolate. Add in some more peppermint extract. Stir, stir stir. Coat cookies in chocolate. Chill to set. Enjoy!
