Chilled Avocado Soup

  • 4 large avocados, peeled and stoned
  • juice of 1 lime
  • ½ red chilli, deseeded and diced
  • 900 ml (1½ pints) vegetable stock, chilled
  • 2 spring onions, finely sliced
  • ½ red pepper, deseeded and diced
  • ¼ cucumber, diced
  • 1 tablespoon coriander leaves
  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 2 tablespoons pumpkin seeds, toasted
  • salt and pepper
  • 8 ice cubes, to serve
  • Place the avocados, lime juice and chilli in a food processor and blend with the chilled stock until smooth. Season to taste with salt and pepper and chill for 15 minutes.
  • Meanwhile, mix together the remaining ingredients.
  • Place 2 ice cubes in each of 4 shallow bowls, and pour over the soup.
  • Sprinkle over the salsa and serve.
